Established in 2020, Jamón Jamón began as a Ghost Kitchen under Chef Rafael Salines Catala, who honed his craft alongside Chef Julian Serrano at Tapas in Las Vegas. Thriving during the pandemic, Chef Rafa expanded to a brick-and-mortar location, earning accolades like Best of Las Vegas. Now at Monument by Calico Ridge, with stunning European-style architecture and terrace views, it’s a destination for weddings, foodie retreats, and authentic Euro-Cuisine enthusiasts.
Meet Chef Rafa the Owner
Born in Alicante, Spain, Chef Rafa grew up inspired by the Mediterranean's fresh flavors and the home-cooked meals of his mother and grandmother. His culinary passion led him to train at Parisian institutions "L'Enotre" and "Le Cordon Bleu" before working at Michelin-starred "El Maestral" and "El Girasol." Chef Rafa then opened Tragallum, a local favorite in Alicante. After 12 years, he joined Julian Serrano at Aria, Las Vegas, bringing his expertise to new horizons.
